Help me pick a resort

Hi. We’ve never been out of the country and we don’t want an all inclusive. Our budget is 6500. Prefer Dominican Republic or Mexico but open to anything. Looking for advice on which hotel. We are going for our honeymoon, in our mid 20s, we do not drink, so nightlife is not important to us, I don’t see us playing beach volleyball, or being overly excited about a waterpark. important to us is great food, great service, fancy room with lots of space and Ocean view with swim out pool and Jacuzzi, good spa, nice beaches. would love to do excursions like a mud bath, zip lining, fishing, snorkeling. We like some with opportunities to eat on site but within walking distance to other restaurants. Thank you so much in advance!
